Late night indulgence

My apologies..the pictures were supposed to be of better quality but my camera ran out of power so i used my cell phone..;)




LAURA LAURA LAURA!!!!
So i had been packing all day for my move out of my apartment. I forgot to eat pretty much. So late night indulgence for my friend who was helping me and i!...fast, healthy and fresh. Teriyaki stir fry :bell peppers, some steak, shrimp, (my mushrooms were too frozen :() and Basmati rice(leanest i think***** so great for the night).
LAURA my darling only big sister taught me how to do this...she rocks at these things! i ate about a quarter of that plate..duh! when you're too hungry for long, u end up full all of a sudden :) enjoy the view and have a great weekend people! muah!

Brunching!! friends over yum!

The pictures speak the word!!!! We have
-Pancakes-- made some plain and some with chocolate inside.hmmm
-Sausages-- a few friends don't eat pork so some chicken and some pork
-Cheese eggs-- milk, eggs, cheese, salt, table butter and black pepper
-Hash browns-- the usual...topped with sweet barbecue sauce and onions
-Spagsss ---or my version of it. I found out about spags in boarding school. its something that Cameroonians make with spaghetti and eggs. i used noodles and eggs and beef and then i made a chunky tomato sauce and greens and then i let it set..so it looked like a pie..tasted good. they can testify !!! ;)

sowwy we had no fruits or orange juice..would have been a lot!!

Roasted tiny Mackerel fish and Bling LG



I am leaving my apartment pretty soon and i really like my kitchen, so i feel like i should go on a cooking spree for any and everyone till my freezer gets empty...haha jk.

So croolooo(suzy) is in town and we have had brunch and this sweet lunch for her. Roasted fish, roasted with fish sauce and potatoes(done like my mama)--boiled and then fried...cant get better..and Kale(see below)

Cameroonians NB----> Kale if cooked like Njama Njama..taste exactly like it...and if cooked like green taste exactly like it. Just how tofu takes the taste of whatever it is cooked with, thats how i see kale..try it as a substitute guys...for those abroad :)---MY SISTER FOUND IT..LAURA IS ALWAYS SEARCHING IN THE GROCERY STORE FOR WHAT LOOKS AND TASTE LIKE STUFF BACK HOME--GENIUS!

The sauce is just fresh pepper, onions, garlic,tomatoes,NJAngsa( its a Cameroonian nut like spice..i don't know how to spell it man..haha) it is meant for fish. Also add Maggi, salt, achu spices(tiny bit), black and white pepper, some spring onions too if you would like.... yum!!!

I have a bundle of myondo in my freezer but i dont want to touch it..like an antique(stupid) haha <3 <3

French toast and Egg goodness!

Breakfast for dayss..

and years...:)

Before July i hadn't had egg in like 4 months. pretty much since my sister left me :( lol. Well i never really got around to buying it. Needless to say i did not miss it enough to want it. It has to be well done for me to like it, this, ...this is well done! ;)

The french toast, may never be as good as my moms, but i loved it. My aunt in the states showed me a secret i did not know. she put some sugar in her french toast mixture. jeezzz good good stuff.

The egg, ok the egg, ok the EGGGG ---- haha i put corn beef and parsley and onions and chopped fresh habanero peppers (Aunty Mary taught me that as well). Quit frankly back home..its all we know, here all they know is hot sauce and jalapeno's and habanero's are just known as the hottest to them. Africans!!! the hottest is our only known.. haha i just love being African and even more being Cameroonian! Can't get any better...woohooo

Deep fried Cuttle fish! yum

I am a sucker for sea food. Fish...God i love fish. So obviously i love deep fried calamari and anything in its family. Squids etc etc. I use cuttle fish sometimes in white okra or pepper soup, y? because it has the texture of snails and its stretches and its yummy.And since its from the sea, it won't change the flavor of your soup, it will remind you of Cray fish. So i figured, why not deep fry some cuttle fish
just like calamari. And Tada! looks great, taste great.

I am hardly ever deep frying stuff at home, just cuz i am not a big fan of friend chicken or fish etc etc, i will rather grill or roast or oven bake or pot roast.;)
But this is good.

The dipping sauce, i found the recipe online.
its just Lemon, ginger, freshly chopped parsley (or coriander), thick coconut milk, sugar and chili pepper...god that stuff taste so decent! hahaha

ps: this is definitely not Cameroonian food, but you see, for me to be attracted to anything by taste, there is always a link to my Cameroonian cuisine..just like the Cray fish and snails reference . N-joy

Home made Bread !!!









So i decided to try and bake bread. I don't mean cake, i realized that hear in Canada they call some cakes bread... :( not fair. like what we call banana cake back home they say banana bread. Anyway, i wanted to make bread cuz i was tired of seeing hard tough baguette and soft sliced dempsters at the G store.

I found this recipe online. but i would however add some tweaks to it when next i make it. For the most part it came out pretty good. Sliced up, with plain egg, pepper sauce, ketchup and black pepper cheddar cheese! yum!

Yum! Coconut rice and goat meat stew!

The veggies, not frozen, actually crunchy. The picture speaks for itself. This meal was yummy! the goat meat was tender... oh yes, i had people over for dinner. This is just one way to eat this type of viande! more to come :) hopefully :)

Ndole, Dodo and Rice





Sooo sorry again, not blog appropriate photos, but it isssss Ndolee! as soon as i get a better picture(that is the next time i cook Ndole, which will be a whileee), i will upload.

There is no substitute for myondo but all the same dodo and Ndole is a priceless combination. Off course i had people over still. i don't eat alone, its no fun! :)

Imagine a drive through in North America where they had Dodo,myondo and ndole as a combo meal with Fanta or top pamplemouse!! (Fly over my errors)

Dodo, potatoes and chicken breast




Picture still not blog appropriate, sorry. When you are hungry there really isn't time for pictures. As you can see the plate is on my lap, ready to be eaten. lol. So this is a quick meal. What makes it quick is the chicken breast, quickest thing to fix :)(i find)

The only Cameroonian thing here is the dodo and fried potatoes and the tomatoes and onion sauce.!! it was yummy is all i can say. ;)

The Famous - Fufu and Eru *****








Fufu and eru, everybody loves it. Unfortunately i did not have the blog idea when i took these pictures, so they are not as clear as they should be. I think this meal is the staple food for Bayangi people...(haha i knwo i did not spell that well.) All the same every Cameroonian eats it. My brothers love it so much its frustrating.

It is usually waterfufu and eru, and waterfufu is saor. unfortunately in this part of the world they have "kotoko flour", semolina, potatoa flour etc. They hardly have waterfufu;
so my strategy : kotoko has the texture of waterfufu so i add a few drops of concentrated lemon before i cook it. trust me it gets close to water fufu! hahaha--- try it

Secondly i heard from my Nigerian friends that they have a soup close to this called "Edikaikon"-- trust me i spelt it badly..

Don't mind the Rum bottle on the table--it was hardly planned. wink wink
Sorry again the pics are not blog worthy, but they sure can make your mouth watery :)

Roasted fish and Jasmine rice!(di best rice 2 me)

Funny thing about fish is the cheapest are the tastiest lol. no joke. mackerel is the cheapest fish and yet the tastiest. I bought this fish at the Asian super market. all the grocery stores have is Salmon and seriously salmon is healthy but u can't roast it like the Cameroonians roast fish! (will upload a salmon dish for you soon). The peas are sweet and tasty, they are not frozen..i don't eat frozen veggies ever.!! enjoy the view (and God no i did not eat this all by myself, its a 2 people serving)

I bet everyone has been there, its a restaurant were you make your plate. so you walk a long aisle of veggies and sea food and a variety of meats. then you spice it with whatever sauce u want. u pretty much cook and they heat it up for you. and you pay based on the weight of the food.. bottom line. good food! good food! To me its the most healthy Eat out!
